  • 3 qt. ripe persimmons
  • 1 c. brown sugar
  • 1 c. white sugar
  • 2 c. sweet milk
  • 1 c. flour
  • 3 tsp. baking powder
  • 1 tsp. soda
  • 2 sticks butter
  • 1 c. grated sweet potatoes
  • 3 eggs
  • 1 tsp. allspice
  • 1 tsp. cinnamon
  • 1 tsp. cloves
  • 1 c. Angel Flake coconut (optional)

Directions

    Wash persimmons; press through colander and then mix all ingredients well.

    Bake at 350° for 1 hour.

    Add 1 cup coconut, if desired, before cooking.
