Pheasant With Sauce

  • 2 pheasants, cut up
  • 1/2 c. flour
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • 1 tsp. paprika
  • 1/4 ??? butter
  • 2 cloves garlic
  • 1/4 c. chopped ripe olives
  • 1/2 c. water
  • 1/2 tsp. Worcestershire

Directions

    Coat pheasant with flour seasoned with salt, pepper and paprika.

    Heat butter in skillet and brown birds on all sides. Slice garlic and add to meat along with olives, water and Worcestershire; cover tightly.

    Simmer 45 minutes.

    Turn pheasant; add wine.

    Cover and simmer 45 minutes longer or until tender. Serve hot with sauce.
