Pheasant With Wild Rice

Ingredients
- 1/2 c. chopped onion
- 4 Tbsp. butter
- 2/3 c. wild rice, rinsed
- 2 c. water
- 1 tsp. salt
- 6 oz. can sliced mushrooms, drained
- 1/2 tsp. sage
- 2 ready to cook pheasants (1 1/2 to 3 lb. each)
- 6 to 8 slices bacon
Directions

1Cook onion in butter until tender; add wild rice, water and salt.

2Cover and cook until rice is tender, 35 to 40 minutes.

3Add mushrooms and sage.

4Season cavity of pheasants with a little salt; stuff with rice mixture and tie legs to tails.

5Place bacon over breast.

6Roast in 350° oven for 1 to 2 1/2 hours, depending on size of bird.
