  • Cooking spray
  • 4 cube steaks (about 4 ounces each)
  • 1 14.5-ounce can no-salt-added diced tomatoes
  • 1/2 cup chopped onion
  • 3 tablespoons lime juice
  • 1 1/2 teaspoons bottled minced garlic or 3 medium garlic cloves, minced
  • 1 medium fresh jalapeno, seeds and ribs discarded, diced
  • 1 teaspoon ground cumin
  • 2 tablespoons snipped fresh cilantro

Directions

    Lightly spray a large skillet with cooking spray.

    Cook the steaks over medium-high heat for 2 to 3 minutes on each side, or until browned.

    Stir in the remaining ingredients except the cilantro.

    Bring to a simmer, still over medium-high heat, and simmer for 2 to 3 minutes.

    Reduce the heat and simmer, covered, for 25 to 35 minutes, or until the steaks are tender.

    Sprinkle with the cilantro.
