Ingredients

  • 3 chicken breasts (skinless and boneless), cut up
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 Tbsp. olive oil
  • 2 (14 oz.) cans chicken broth
  • 1 can diced whole tomatoes
  • 1 green pepper, diced
  • 3/4 c. picante sauce
  • 1 Tbsp. dried basil, crushed
  • 1/2 Tbsp. dried oregano, crushed
  • 2 c. uncooked rotini pasta

Directions

    Cook chicken, onion, garlic and olive oil in saucepan over medium heat until the chicken is no longer pink (approximately 5 minutes).

    Add all other ingredients but pasta.

    Bring to a boil and reduce heat.

    Simmer for about 12 minutes.

    Cook pasta separately and add to soup when ready to dip and serve.
