Ingredients

  • about 10 lb. beets
  • 2 c. sugar
  • 2 c. water
  • 2 c. vinegar
  • 1 tsp. allspice
  • 1 lemon, sliced thin (seeds removed)
  • 1 Tbsp. cinnamon
  • 1 tsp. cloves

Directions

    Boil beets until tender.

    Skin in cold water.

    Slice and put back in pot.

    Combine remaining ingredients and pour over beets. Heat to a simmer and let simmer 15 minutes.

    Pack in hot, sterilized jars and seal tight.
