- 3 lb. small whole beets
- 1 c. water
- 1 tsp. whole allspice
- 3-inch stick cinnamon
- 2 c. vinegar
- 1/2 c. sugar
- 6 whole cloves
Directions

1Wash beets, leaving on root and 1-inch of tops.

2Cover beets with boiling water; simmer for 25 minutes.

3Drain.

4Slip off skins and trim beets.

5In large kettle combine vinegar, water, and sugar.

6Add spices and bring to a boil.

7Simmer 15 minutes.

8Pack beets in hot jars leaving 1/2-inch headspace.

9Cover beets with hot liquid.

10Put on hot lids and seal.

11If lids don't seal in 15 minutes, hot bath jars.
