Ingredients

  • 1 gal. beets (medium size)
  • 2 c. sugar
  • 1 1/2 tsp. salt
  • 2 sticks cinnamon
  • 1 Tbsp. allspice
  • 3 1/2 c. vinegar
  • 1 1/2 c. water

Directions

    Wash beets.

    Cut tops, leaving part of stems (about 1 1/2-inches) to retain color.

    Boil until soft and peel while still warm.

    Place in pint jars.

    Boil all other ingredients and pour over beets and seal.

    Boil lids.
