  • 1/3 c. vinegar
  • 1/4 c. sugar
  • 1/4 c. water
  • 1/2 tsp. ground cinnamon
  • 1/4 tsp. salt
  • 1/4 tsp. ground cloves
  • 2 c. sliced, cooked beets or 1 (16 oz.) can sliced beets, drained

Directions

    In a medium saucepan combine vinegar, sugar, water, cinnamon, salt and cloves.

    Bring to a boil, stirring occasionally; add sliced beets.

    Return to a boil; reduce heat.

    Cover and simmer 5 minutes.

    Cool, then chill in liquid 8 hours or overnight.

    Makes about 2 cups.
