  • 4 qt. beets
  • 3 c. vinegar
  • 2 c. water
  • 2 1/2 c. sugar
  • 2 tsp. allspice
  • 1 (3-inch) stick cinnamon or 1/4 tsp. ground cinnamon
  • 1/2 tsp. whole cloves
  • 1 tsp. salt

Directions

    Cook beets until tender.

    Slip off skins.

    Combine rest of ingredients and bring to boil.

    Simmer 5 minutes.

    Add beets and simmer 5 more minutes.

    Pack beets into hot jars, fill with syrup and seal.
