- 2 1/4 lb raw beets, trimmed, leaving 1 inch stem attached
- 1 cup sugar
- 4 cups apple cider vinegar
- 1 None cinnamon stick
- 8 None black peppercorns
- 4 None dried chilies
- 1 tsp black mustard seeds
Directions

1Place beets in a large saucepan of cold water and bring to a boil. Boil for 45 mins, or until tender. Let cool in cooking water then drain, reserving 1/2 cup liquid.

2Rub skin off beets then cut into quarters. Place in sterilized jars.

3Meanwhile, in a large saucepan, combine reserved cooking liquid, sugar and vinegar. Add remaining ingredients and stir over medium heat, without boiling, until sugar has dissolved. Bring to a boil then pour over beets. Seal. Let cool. Store in refrigerator.
