Molded Rice Pudding

  • 1 c. Arborio rice
  • 3 c. milk
  • 4 eggs, separated
  • 6 oz. semi-sweet chocolate
  • 3 oz. butter
  • 1/2 c. plus 2 Tbsp. superfine sugar
  • 1/2 c. red currant jelly
  • 1/4 c. sweet white wine

    Bring a saucepan of salted water to boil.

    Add rice and cook 5 minutes; drain.

    Return rice to saucepan, add milk and cook over low heat until all liquid is absorbed.

    Beat the egg yolks with 1/2 cup sugar until light.

    Melt the chocolate and butter together in a heatproof bowl set over simmering water.

    Beat the egg whites to stiff peaks, gradually adding 2 tablespoons sugar.
