  • 1 cup sugar
  • 2 cups water
  • 2 cups vinegar
  • 2 cans whole beets
  • 5 tablespoons cinnamon
  • 1 teaspoon cloves
  • 1 teaspoon allspice

    Select young, tender beets: wash fresh beets.

    Leave 2 inches of stem and boil 15 minutes in water to cover.

    Make a syrup of the sugar, water, vinegar and spices.

    Put beets in hot sterilized jars.

    Pour hot vinegar over beets and seal.
