- 16 oz. sliced beets
- 6 hard-boiled eggs
- 1 c. cider vinegar
- 2 Tbsp. sugar
- 1 Tbsp. pickling spices
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1 onion, thinly sliced
Directions

1Drain beets, reserving liquid.

2Place beets and eggs in large bowl.

3In medium saucepan, combine beet liquid and remaining ingredients.

4Bring to boil and simmer about 2 minutes.

5Pour over beets and eggs.

6Cover and refrigerate 24 hours.

7Drain and discard liquid.

8Cut eggs in half lengthwise to show color.
