  • 16 oz. sliced beets
  • 6 hard-boiled eggs
  • 1 c. cider vinegar
  • 2 Tbsp. sugar
  • 1 Tbsp. pickling spices
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1 onion, thinly sliced

    Drain beets, reserving liquid.

    Place beets and eggs in large bowl.

    In medium saucepan, combine beet liquid and remaining ingredients.

    Bring to boil and simmer about 2 minutes.

    Pour over beets and eggs.

    Cover and refrigerate 24 hours.

    Drain and discard liquid.

    Cut eggs in half lengthwise to show color.
