Pickled Mushrooms

Ingredients

  • 1/3 c. red wine vinegar
  • 1/3 c. salad oil
  • 1 small onion, thinly sliced
  • 1 tsp. salt
  • 2 tsp. parsley (I use dried)
  • 1 tsp. prepared mustard
  • 1 Tbsp. brown sugar (Sugar Twin can be used)
  • 2 (6 oz.) cans button mushrooms

Directions

    Combine all ingredients except mushrooms and bring to a boil. Add mushrooms.

    Simmer 5 to 6 minutes.

    Chill, covered, for several hours (I make the day before using), stirring occasionally.
