- 6 lb. peeled peaches
- 3 lb. sugar
- 1 pt. vinegar
- 1 Tbsp. ginger
- 2 Tbsp. whole cloves
- 4 sticks or 4 oz. cinnamon
- 1 pt. water
Directions

1Wash and peel peaches.

2Drop peeled peaches into cold salt and vinegar solution (2 tablespoons salt and 2 tablespoons vinegar, 1 gallon water) immediately to prevent discoloration.

3Mix sugar and vinegar and hot water; add spices (tied loosely in cloth bag). Boil and skim.

4Wash peaches in cold water and drain.

5Drop drained peaches into boiling syrup and cook 5 to 6 minutes.

6Pack in preheated jars.

7Cover with boiling spiced vinegar or let stand overnight in syrup, then pack in jars.

8Cover with boiling vinegar.

9Seal and process 30 minutes in hot water bath at simmering temperature.
