  • 8 c. sliced squash
  • 2 Tbsp. salt (canning salt)
  • 3 c. sugar
  • 2 Tbsp. celery seed
  • 2 c. chopped onion
  • 2 c. vinegar
  • 2 Tbsp. mustard seed
  • 2 green bell peppers

Directions

    Mix squash and salt; let set 1 hour (drain).

    Bring sugar, vinegar and spices to a boil.

    Add the squash to the boiling vinegar.

    Bring to a boil again.

    Let boil for 10 to 15 minutes. Put into hot jars and seal.

    Makes 6 pints.
