- 8 c. sliced squash
- 2 Tbsp. salt (canning salt)
- 3 c. sugar
- 2 Tbsp. celery seed
- 2 c. chopped onion
- 2 c. vinegar
- 2 Tbsp. mustard seed
- 2 green bell peppers
Directions

1Mix squash and salt; let set 1 hour (drain).

2Bring sugar, vinegar and spices to a boil.

3Add the squash to the boiling vinegar.

4Bring to a boil again.

5Let boil for 10 to 15 minutes. Put into hot jars and seal.

6Makes 6 pints.
