  • 1/4 sugar
  • 1 cup flour
  • 1 tsp baking powder
  • 1 pinch salt
  • 3/4 cup milk
  • 1 tbsp melted butter

    In a bowl beat egg and sugar until thick and pale.

    Sift flour with baking powder and salt.

    Add sifted dry ingredients in two batches, alternating with milk, adding just enough milk to form a smooth, thick batter.

    Lastly, stir in the melted butter.

    Cook on a medium heat with oil, tip batter into pan in tablespoons, cook until bubbles come to the surface then flip, about 1 to 2 minutes max.

    Serve with butter or whipped cream and jam
