Ingredients

  • 1 (9-inch) pie shell
  • 2 c. canned pumpkin
  • 3/4 c. light brown sugar
  • 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 1/2 each: ginger and nutmeg
  • 1/4 tsp. allspice and cloves
  • 2 eggs
  • 1 c. heavy cream
  • 6 Tbsp. rum

    Chill pie shell.

    In a medium saucepan combine and heat pumpkin for 5 minutes.

    Stir in sugar, salt and spices.

    In a medium bowl, beat eggs until thick and lemon colored.

    Add cream and rum.

    Stir into pumpkin mixture.

    Strain through a fine strainer and pour into chilled unbaked shell.

    Bake in a preheated 450° oven for 15 minutes.

    If necessary, cover edges with strips of foil to keep from browning too rapidly.

    Reduce heat to 300° and bake 30 to 40 minutes more or until set.
