- 1 (9-inch) pie shell
- 2 c. canned pumpkin
- 3/4 c. light brown sugar
- 1/2 tsp. salt
- 1 tsp. cinnamon
- 1/2 each: ginger and nutmeg
- 1/4 tsp. allspice and cloves
- 2 eggs
- 1 c. heavy cream
- 6 Tbsp. rum
Directions

1Chill pie shell.

2In a medium saucepan combine and heat pumpkin for 5 minutes.

3Stir in sugar, salt and spices.

4In a medium bowl, beat eggs until thick and lemon colored.

5Add cream and rum.

6Stir into pumpkin mixture.

7Strain through a fine strainer and pour into chilled unbaked shell.

8Bake in a preheated 450° oven for 15 minutes.

9If necessary, cover edges with strips of foil to keep from browning too rapidly.

10Reduce heat to 300° and bake 30 to 40 minutes more or until set.
