- 8 ounces, weight Muenster Cheese
- 8 ounces, weight Monterey Jack Cheese
- 8 ounces, weight Mozzarella Cheese
- 8 ounces, weight Extra Sharp Cheddar Cheese
- 1/4 cups Sugar
- 7 ounces, weight Jarred Pimentos
- 1 cup Good, Real Mayonnaise
Directions

1Grate the cheeses using a food processor or a box grater.

2Put the cheese in a large bowl.

3Add the sugar, and toss together.

4Add the pimentos with their juice and toss together (until the pimentos are well dispersed).

5Stir in the mayonnaise.

6The pimento cheese will be very soft when just prepared, but it will become more stiff after refrigerated for a few hours.

7Store pimento cheese in a covered container.

8Serve on sandwiches, celery sticks, ginger snaps (my favorite), or graham crackers.
