Pina Colada Dip

Ingredients

  • 2/3 c. sugar
  • 2 Tbsp. coconut extract
  • 2 eggs
  • 1 c. pineapple juice
  • 1 c. whipping cream

Directions

    Whisk all ingredients together, except the whipping cream. Cook in the top of a double boiler until boiling and thick, stirring constantly.

    Cool in a refrigerator until serving time. Just before serving, whip 1 cup of whipping cream until fluffy. Fold whipped cream into mixture and serve.
