- 3 1/2 c. cake flour
- 2 c. sugar
- 1 tsp. baking soda
- 1 tsp. salt
- 1 tsp. ground cinnamon
- 1 c. vegetable oil
- 3 eggs, slightly beaten
- 2 c. chopped ripe bananas
- 1 c. chopped pecans
- 1 1/2 tsp. vanilla
- 1 (8 oz.) can crushed pineapple in juice (undrained)
Directions

1Heat oven to 350°; grease and flour 3 round pans, 9 x 1 1/2-inch.

2Mix flour, sugar, baking soda, salt and cinnamon in a large bowl; add oil and eggs.

3Stir until all dry ingredients are moistened (do not beat).

4Stir in bananas, pecans, vanilla and pineapple.

5Divide batter evenly among pans.

6Bake 25 to 30 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pans.

7Cool completely on wire rack. Fill layers and frost side and top of cakes with Cream Cheese Frosting.

8Sprinkle 1/2 cup pecans on top of cake.

9Refrigerate any remaining cake.
