  • 1 (1 lb. 4 oz.) can crushed pineapple
  • 2 c. flour
  • 1/2 c. sugar
  • 3 tsp. baking powder
  • 1 tsp. salt
  • 1/2 tsp. baking soda
  • 1 beaten egg
  • 1/4 c. margarine
  • 1 1/2 tsp. vanilla

Directions

    Drain pineapple well.

    Mix flour, sugar, baking powder, salt and baking soda in a large bowl.

    Add egg, pineapple, margarine and vanilla; mix with wooden spoon until blended.

    Turn into greased loaf pan.

    Bake for 45 minutes to 1 hour at 350°.

    If made as muffins, bake for 20 to 30 minutes at 350°.
