Pineapple Cake

- 1/2 c. butter
- 1 1/2 c. sugar
- 1 tsp. vanilla
- 2 tsp. baking powder
- 1/8 tsp. salt
- 1 c. crushed pineapple (just as it comes from the can)
- 2 1/2 c. cake flour
- 1/4 c. water
- 3 egg whites, beaten stiff
Directions

1Cream butter and sugar together.

2Add vanilla and crushed pineapple, then a portion of flour which has been sifted with baking powder and salt.

3Add water alternately with the remaining flour and stir only until smooth.

4Fold in egg whites, beaten stiff, and place in 2 (8-inch) greased and floured layer cake pans.

5Bake in moderate oven (350°) for 25 to 30 minutes.

6Cool and ice between layers and on top and sides with seven-minute icing.
