  • 2 c. sugar
  • 1 1/2 c. oil
  • 3 eggs, beaten
  • 1 1/2 tsp. vanilla
  • 2 1/2 c. flour + 1 Tbsp.
  • 1 1/2 tsp. salt
  • 1 1/2 tsp. cinnamon
  • 2 tsp. soda
  • 2 c. grated carrots
  • 1 (8 oz.) can crushed pineapple with juice
  • 1 c. chopped walnuts

Directions

    Combine sugar, oil, eggs and vanilla. Sift together flour, salt, cinnamon and soda. Combine both mixtures. Add remaining ingredients. Bake in greased 9 x 13-inch pan at 350° for 40 to 45 minutes.
