Pineapple Carrot Bread

Ingredients

  • 2 c. sugar
  • 2 c. all-purpose flour
  • 1 tsp. soda
  • 1 tsp. salt
  • 1 1/2 tsp. ground cinnamon
  • 3 eggs, beaten
  • 1 c. vegetable oil
  • 1 c. grated carrots (or I use canned carrots)
  • 1 (8 oz.) can crushed pineapple (undrained)

Directions

    Combine flour, salt, soda and cinnamon; set aside.

    Combine eggs, sugar and oil in mixing bowl.

    Mix well.

    Stir in carrots and pineapple.

    Add dry ingredients and mix well.

    Pour batter into 2 greased 9 x 5 x 3-inch loaf pans.

    Bake at 325° for 1 hour or until done.

    Yields 2 loaves or makes 5 miniature loaves.
