Pineapple Carrot Bread

Ingredients
- 2 c. sugar
- 2 c. all-purpose flour
- 1 tsp. soda
- 1 tsp. salt
- 1 1/2 tsp. ground cinnamon
- 3 eggs, beaten
- 1 c. vegetable oil
- 1 c. grated carrots (or I use canned carrots)
- 1 (8 oz.) can crushed pineapple (undrained)
Directions

1Combine flour, salt, soda and cinnamon; set aside.

2Combine eggs, sugar and oil in mixing bowl.

3Mix well.

4Stir in carrots and pineapple.

5Add dry ingredients and mix well.

6Pour batter into 2 greased 9 x 5 x 3-inch loaf pans.

7Bake at 325° for 1 hour or until done.

8Yields 2 loaves or makes 5 miniature loaves.
