Pineapple Carrot Cake

Ingredients

  • 2 1/2 c. flour
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 2 tsp. cinnamon
  • 1 c. oil
  • 3 eggs
  • 2 c. sugar
  • 2 tsp. vanilla
  • 1 c. grated carrots
  • 1 (8 1/2 oz.) can crushed pineapple (use half of liquid)
  • 1 c. coconut (flaked)
  • 1 c. chopped nuts

Directions

    Sift flour, baking soda, salt and cinnamon; set aside. Combine oil, eggs and sugar and beat on medium speed for 2 minutes.

    Add vanilla and dry ingredients; mix well.

    Add the remaining ingredients and stir well with beater for 1 minute. Bake in greased and floured 9 x 13-inch pan at 350° for 45 minutes.
