Pineapple Casserole

  • 8 slices bread (crusts removed)
  • 3 eggs
  • 1/2 c. sugar
  • 2 Tbsp. flour
  • pinch of salt
  • 1 can crushed pineapple (No. 2 1/2 size)
  • 1 stick butter or margarine

Directions

    Grease casserole lightly.

    Cube bread.

    Beat eggs; gradually add sugar, flour, salt and crushed pineapple, juice and all.

    Mix all together and put into casserole, then put bread cubes on top. Then slice 1 stick of butter over all.

    Bake approximately 45 minutes at 400° uncovered.

    Serves 6 to 8 (in an 8 x 8-inch pan). Excellent with ham or as a side dish.
