Pineapple Fried Rice

  • 1 tablespoon vegetable oil
  • 1 -2 garlic clove, minced
  • 1 teaspoon finely chopped fresh ginger
  • 1/8 teaspoon crushed red pepper flakes, use more if you want it spicier
  • 3 cups cold cooked rice
  • 1/4 cup light soy sauce
  • 1 (8 1/4 ounce) can crushed pineapple in syrup, drained
  • 1/4 cup thinly sliced green onion, including green tops

Directions

    In large nonstick skillet, heat oil over medium-low heat until hot.

    Add garlic, ginger and red pepper, cook and stir 2 minutes.

    Increase heat to medium-high. Add rice and soy sauce; cook 2 minutes, stirring frequently.

    Add pineapple, tossing to combine.

    Heat rice through. Sprinkle with green onions before serving.
