- 1 c. sugar
- 4 Tbsp. cornstarch
- 1/2 c. hot water
- 1 c. pineapple juice
- 3 egg yolks, slightly beaten
- 3 Tbsp. butter
- 1 Tbsp. lemon juice
- 1 1/3 tsp. lemon rind
- 1 1/4 c. crushed pineapple, well drained
Directions

1In saucepan, combine sugar and cornstarch.

2Gradually stir in water and pineapple juice.

3Add egg yolks.

4Blend in butter, lemon juice and rind.

5Add crushed pineapple.

6Cook over medium heat, stirring constantly.

7Boil 1 minute.

8Remove from heat and stir until smooth.

9Pour into baked pie shell.

10Cover with meringue.
