  • 2 cups all-purpose flour
  • 2 tsp. baking powder
  • 1/2 tsp. Baking soda
  • 1/2 tsp. salt
  • 1/2 cup firmly packed brown sugar
  • 1 egg, well beaten
  • 1 container (8 oz.) sour cream
  • 1 can (8 oz.) crushed pineapple, undrained
  • 1/3 cup melted shortening
  • 1/2 cup chopped pecans

Directions

    Combine flour, baking powder, soda, salt and brown sugar in a large bowl; stir well.

    Combine egg, sour cream, pineapple and shortening.

    Make a well in center of dry ingredients; add pineapple mixture and stir until just moistened.

    Stir in pecans.

    Spoon into greased muffin pans, filling 2/3 full.

    Bake at 400F for 20 to 25 minutes or until brown.
