Pineapple Nut Spice Cake

  • 2 1/2 c. sifted self-rising flour
  • 2 c. sugar
  • 1 1/2 c. Crisco oil
  • 4 egg yolks
  • 1 small (8 1/2 oz.) can crushed pineapple and juice
  • 2 Tbsp. hot water
  • 2 tsp. cinnamon
  • 1 tsp. butter extract
  • 1 tsp. coconut extract
  • 1 tsp. vanilla extract
  • 1 c. chopped nuts
  • 4 egg whites, beaten
  • 1 1/2 tsp. nutmeg

Directions

    Combine all ingredients except nuts and egg whites.

    Beat well and then add nuts.

    Fold in egg whites.

    Pour into greased and floured tube pan.

    Place in cold oven; set oven at 325° and bake 1 hour and 15 minutes.

    Let cool 15 minutes before removing from pan.
