Ingredients

  • 1 cup all purpose flour or whole wheat flour or a combination of both
  • 2 tablespoons granulated sugar
  • 2 tablespoons pineapple crush/squash
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda optional
  • 1/2 teaspoon salt
  • 1 cup milk
  • 2 large eggs
  • 3 tablespoons oil / butter, plus more for oiling the pan

Directions

    Sift flour, sugar, baking powder, baking soda and salt, in a medium bowl.

    In a separate bowl, whisk milk, eggs, pineapple crush and oil.

    Pour wet ingredients into the dry and stir until just combined. Do not over mix.

    Heat the pan and Oil it properly. Pour 1/4 cup batter onto pan to make pancakes.

    Cook about 1&1/2 minutes each side (depending on size).

    Serve with a little pineapple syrup mixed with maple syrup.
