Pineapple Picnic Cake

  • 1 teaspoon baking soda

    Bake 350 for 40 - 45 minutes. 9x13 pan To prepare your pan for baking: Line the bottom of the pan with wax paper. (Tip to keep the wax paper in place is to put margarine on the bottom of the pan first then pat the wax paper down in place. Now you can grease the bottom and sides of the pan (the bottom of the pan is the wax paper but you still want to grease the wax paper) then dust with Flour. Tap out excess flour

    Place all the ingredients in one large bowl. Mix thoroughly with a wooden spoon, no need to use an electric mixer. Mix well and pour in your pan and bake. test with a toothpick in center of cake. This is a very moist cake so my may see pieces of the pineapple on the toothpick with is fine, you just don't want to see dough. Cook cake completely before frosting.

    Prepare frosting....You can top the cake with chopped walnuts and cherries, optional. You could also toast some coconut and spread that on top of your cake.
