- 4 egg yolks
- 1 c. sugar
- 4 Tbsp. flour
- 1 Tbsp. butter
- 1/2 c. rich cream
- 4 egg whites
- 1/4 tsp. cream of tartar
- 6 Tbsp. sugar
- 1 (9-inch) pie shell, baked
- 1 can crushed pineapple (with juice)
Directions

1Beat egg yolks, sugar, flour, butter and cream.

2Mix well and add crushed pineapple.

3Cook until thick and pour into pie shell. Beat egg whites and cream of tartar.

4Add sugar, 1 tablespoon at a time.

5Beat until stiff.

6Put on top of pie and brown.
