Pineapple Pound Cake

- 1/2 c. shortening
- 2 3/4 c. sugar
- 3 c. plain flour
- 1 tsp. vanilla
- 1/2 c. milk
- 1 c. butter
- 6 eggs
- 1 tsp. baking powder
- 3/4 c. crushed pineapple
Directions

1Combine shortening, butter and sugar.

2Cream until light and fluffy.

3Add eggs, one at a time, beating well after each addition. Combine flour and baking powder; add to creamed mixture alternately with milk and vanilla, beating well after each addition.

4Stir in crushed pineapple.

5Pour into well-greased and floured 10-inch tube pan.

6Place in a cold oven; set temperature at 325° and bake for 1 hour and 15 minutes, or until cake tests done.

7Cool in pan 10 to 15 minutes.

8Invert onto serving dish. If desired, drizzle glaze over top and sides.
