Pineapple Pound Cake

- 1/2 c. vegetable shortening
- 2 sticks butter or margarine
- 2 3/4 c. sugar
- 6 large eggs
- 3 c. cake flour
- 1 tsp. baking powder
- 1/4 c. milk
- 1 tsp. vanilla
- 3/4 c. undrained pineapple with juice
Directions

1Cream together vegetable shortening, margarine and sugar.

2Add eggs, one at a time, beating thoroughly after each addition.

3Sift together flour and baking powder.

4Add small amount at a time to creamed mixture, alternating with the 1/4 cup milk.

5Mix well. Add vanilla and undrained pineapple.

6Blend well.

7Pour into greased and floured 10-inch tube pan.

8Place in cold oven.

9Set temperature at 350° and bake 1 1/2 hours or until done to the touch.

10Remove from oven.

11Let stand 10 minutes.

12Remove from pan and pour icing over while still hot.
