Pineapple Pound Cake

  • 1/2 c. vegetable shortening
  • 2 sticks butter or margarine
  • 2 3/4 c. sugar
  • 6 large eggs
  • 3 c. cake flour
  • 1 tsp. baking powder
  • 1/4 c. milk
  • 1 tsp. vanilla
  • 3/4 c. undrained pineapple with juice

    Cream together vegetable shortening, margarine and sugar.

    Add eggs, one at a time, beating thoroughly after each addition.

    Sift together flour and baking powder.

    Add small amount at a time to creamed mixture, alternating with the 1/4 cup milk.

    Mix well. Add vanilla and undrained pineapple.

    Blend well.

    Pour into greased and floured 10-inch tube pan.

    Place in cold oven.

    Set temperature at 350° and bake 1 1/2 hours or until done to the touch.
