Pineapple Raisin Cookies

- 1 c. shortening
- 1 1/2 c. sugar
- 1 egg
- 1 (8 3/4 oz.) can crushed pineapple with juice
- 1 c. raisins
- 3 1/2 c. flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/4 tsp. nutmeg
- 1/2 c. chopped nuts
Directions

1Mix shortening, sugar and egg thoroughly.

2Stir in pineapple. Measure flour by dipping method or by sifting.

3Stir together flour, soda, salt and nutmeg and blend.

4Mix in nuts.

5Chill at least one hour.

6Heat oven to 400°.

7Drop rounded teaspoonfuls of dough about 2 inches apart on lightly greased baking sheet.

8Bake 8 to 10 minutes or until no imprint remains when touched lightly. Makes about 5 dozen cookies.
