Pineapple Scallop

  • 1 c. crushed pineapple and juice
  • 1/4 c. sugar
  • 2 Tbsp. flour
  • 1/2 tsp. salt
  • 3 well beaten eggs
  • 2/3 stick margarine
  • 3 slices bread, crusts removed (feed to birds!)

Directions

    Mix well the first five ingredients.

    Pour into well-greased baking dish.

    Melt margarine.

    Dice bread into small cubes and mix with margarine; when well mixed, cover top of pineapple mixture. Bake at 400° until thoroughly heated and brown on top.

    Goes well with hot or cold ham.
