- 1 (8 oz.) can pineapple chunks
- 1 Tbsp. canola oil
- 1 Tbsp. low sodium soy sauce
- 1 clove minced garlic
- 1/4 tsp. ground ginger
- 1/8 tsp. crushed red pepper
- 20 medium shelled shrimp
- 1 c. chopped bell pepper
- 1/4 c. chopped onion
- 1 tsp. cornstarch
Directions

1Pour juice from pineapple into a small bowl.

2Add 1/2 teaspoon oil, soy sauce, garlic, ginger and red pepper; mix well.

3Add shrimp.

4Toss well and cover, refrigerate one hour.

5Drain shrimp, reserve marinade.
