- 1 (20 oz.) can unsweetened pineapple chunks
- 1 c. buttermilk
- 2 tsp. vanilla
- 2 tsp. liquid sweetener
- mint leaves (optional)
Directions

1Drain pineapple, reserving 1/2 cup juice.

2Freeze pineapple chunks.

3Place juice, buttermilk, vanilla, sweetener and frozen pineapple into a blender container.

4Blend until smooth.

5Pour into glasses and garnish with mint, if desired.
