Pineapple Upside-Down Cake

  • 1 1/4 c. sifted flour (we use cake flour)
  • 1 1/4 tsp. baking powder
  • 1/4 tsp. salt
  • 4 Tbsp. butter
  • 3/4 c. sugar
  • 1 egg, well beaten
  • 1/2 c. milk
  • 1 tsp. vanilla
  • 4 Tbsp. butter
  • 1/2 c. brown sugar, firmly packed
  • 4 slices pineapple
  • 1 c. pecans, slightly broken

    Sift flour once.

    Measure, add baking powder and salt and sift together 3 times.

    Cream butter thoroughly; add sugar gradually and cream together until light and fluffy.

    Add egg, then flour, alternately with milk, a small amount at a time.

    Beat after each addition until smooth.

    Add vanilla.
