- 1 1/4 c. sifted flour (we use cake flour)
- 1 1/4 tsp. baking powder
- 1/4 tsp. salt
- 4 Tbsp. butter
- 3/4 c. sugar
- 1 egg, well beaten
- 1/2 c. milk
- 1 tsp. vanilla
- 4 Tbsp. butter
- 1/2 c. brown sugar, firmly packed
- 4 slices pineapple
- 1 c. pecans, slightly broken
Directions

1Sift flour once.

2Measure, add baking powder and salt and sift together 3 times.

3Cream butter thoroughly; add sugar gradually and cream together until light and fluffy.

4Add egg, then flour, alternately with milk, a small amount at a time.

5Beat after each addition until smooth.
