Pineapple White Fudge

Ingredients

  • 2 c. granulated sugar
  • 1/2 c. sour cream
  • 1/3 c. white corn syrup
  • 2 Tbsp. butter
  • 1/4 tsp. salt
  • 1 tsp. vanilla
  • 3/4 c. candied pineapple, diced
  • 1/2 c. pecans, chopped

Directions

    Combine sugar, sour cream, corn syrup, butter and salt.

    Bring to a boil over medium heat, stirring constantly until sugar dissolves.

    Boil, without stirring to 236° or until a little mixture dropped into cold water forms a soft ball.

    Remove from heat and let stand 15 minutes, without stirring.

    Add vanilla. Beat until mixture starts to lose its gloss, about 8 minutes.

    Stir in pineapple and nuts.

    Pour into buttered 8-inch square pan.

    Cool and cut into squares.
