- 2 eggs
- 1 c. oil
- 1 c. sugar
- 1 tsp. vanilla
- 3 c. flour
- 1/2 tsp. baking powder
- 2 tsp. baking soda
- 1 1/2 tsp. cinnamon
- 3/4 tsp. nutmeg
- 1 tsp. salt
- 2 c. grated zucchini
- 1 c. crushed pineapple
- 1 c. raisins
- 1 c. chopped nuts
Directions

1Beat eggs, oil and sugar until thick and foamy.

2Add vanilla. Combine dry ingredients and stir into eggs.

3Fold in zucchini and pineapple, fold in raisins and nuts.

4Pour into 2 greased and floured 9 x 5-inch bread pans.

5Bake at 350° for 1 hour.

6Cool 10 minutes and remove from pans.
