Pineapple Zucchini Bread

  • 2 eggs
  • 1 c. oil
  • 1 c. sugar
  • 1 tsp. vanilla
  • 3 c. flour
  • 1/2 tsp. baking powder
  • 2 tsp. baking soda
  • 1 1/2 tsp. cinnamon
  • 3/4 tsp. nutmeg
  • 1 tsp. salt
  • 2 c. grated zucchini
  • 1 c. crushed pineapple
  • 1 c. raisins
  • 1 c. chopped nuts

Directions

    Beat eggs, oil and sugar until thick and foamy.

    Add vanilla. Combine dry ingredients and stir into eggs.

    Fold in zucchini and pineapple, fold in raisins and nuts.

    Pour into 2 greased and floured 9 x 5-inch bread pans.

    Bake at 350° for 1 hour.

    Cool 10 minutes and remove from pans.
