Pineapple Zucchini Bread

- 3 eggs
- 1 c. salad oil
- 2 c. sugar
- 3 tsp. vanilla
- 2 c. grated zucchini
- 1 (8 oz.) can crushed pineapple, drained
- 3 c. flour
- 2 tsp. baking soda
- 1 tsp. salt
- 1/2 tsp. baking powder
- 1 1/2 tsp. cinnamon
- 3/4 tsp. nutmeg
- 1 c. chopped walnuts
- 1 c. raisins
Directions

1Beat eggs 1 minute.

2Add salad oil, sugar and vanilla.

3Beat until thick and creamy.

4(Will be lemon colored.) Gently fold in zucchini and pineapple.

5In separate bowl, combine remaining ingredients.

6Gently fold into zucchini mixture until just blended.

7Bake in two greased and floured loaf pans at 350° for 1 hour.
