- 24 large marshmallows
- 1/2 c. milk
- 1 tsp. vanilla
- 1/8 tsp. salt
- 6 drops red food coloring
- 6 drops peppermint extract
- 1 c. chilled whipping cream
- 2 Tbsp. crushed peppermint
- pie crust
Directions

1Bake pie crust.

2Heat marshmallows and milk in a saucepan over low heat, stirring constantly, just until marshmallows are melted. Remove from heat; stir in vanilla, salt, peppermint extract and food coloring.

3Refrigerate, stirring occasionally, until the mixture mounds when dropped from a spoon.

4Beat whipping cream in a chilled bowl until stiff.

5Stir marshmallow mixture until blended; fold into whipped cream.

6Pour into crust.

7Refrigerate at least 12 hours.
