  • 1 c. pinto beans, drained and mashed
  • 3 c. white sugar
  • 4 eggs
  • 2 sticks margarine, melted and cooled
  • 1 c. chopped pecans
  • 1 c. coconut
  • 1 tsp. vanilla
  • 3 unbaked shallow pie crusts

    Beat eggs. Add margarine and sugar. Stir in beans. Add coconut, nuts and vanilla. Pour into the pie shells. Bake in 350° preheated oven for approximately 45 minutes or until firm.
