  • 1 lb. pinto beans, soaked overnight, drained and put in large kettle
  • 1/2 lb. ham hock or smoked ham
  • 1 large onion, chopped
  • 3 stalks celery, chopped
  • 1 Tbsp. parsley, chopped
  • 1/2 green pepper, chopped
  • 2 bay leaves
  • 2 large cloves garlic, crushed

    Add water to cover.

    Bring to a boil.

    Simmer, uncovered, 2 hours; add more water if necessary.

    After 2 hours, add 1/2 stick margarine and pepper to taste.

    Cover; cook another hour on low heat.

    Serve over white rice.
