- 1 lb. pinto beans, soaked overnight, drained and put in large kettle
- 1/2 lb. ham hock or smoked ham
- 1 large onion, chopped
- 3 stalks celery, chopped
- 1 Tbsp. parsley, chopped
- 1/2 green pepper, chopped
- 2 bay leaves
- 2 large cloves garlic, crushed
Directions

1Add water to cover.

2Bring to a boil.

3Simmer, uncovered, 2 hours; add more water if necessary.

4After 2 hours, add 1/2 stick margarine and pepper to taste.

5Cover; cook another hour on low heat.

6Serve over white rice.
