- 2 lb. dried pinto beans
- 3 to 4 lb. ham (bite size)
- 2 medium onions, minced
- 1 tsp. garlic powder
- 1 Tbsp. black pepper
- 1 Tbsp. salt (optional)
- 3 qt. water
- 1/2 tsp. oregano
- 3 to 4 bay leaves
Directions

1Soak beans overnight with plenty of water; add to beans, onion and trimmed ham (bite size).

2Add remaining ingredients.

3Cover and bring to a boil.

4Boil slowly for 2 to 3 hours, stirring frequently.

5An 8-quart pot is best.

6Remove bay leaves before serving.
