Pisco Sour

Ingredients

  • 1 egg white
  • 6 ounces Pisco
  • 2 ounces fresh lime or lemon juice
  • 12 ounces Simple Syrup (p. 376), or superfine granulated sugar
  • 2 cups crushed ice
  • Angostura bitters

Directions

    Place the egg white in a blender and blend briefly, until frothy and light.

    Then add all the other ingredients except the bitters, and blend until frothy and smooth.

    Taste and adjust to your liking with more citrus or sugar.

    Pour into two glasses and sprinkle with a drop or two of bitters.
